I have the tube from my sink to my water/ice maker running through my open ceiling in my loft. Is it safe to paint this tubing to match the ceiling, or will the paint affect the taste/purity of the water at all? Yes it is fine. That tube is connected to the cold water supply. You may want to use an oil based paint just in case the tube sweats a little. If you use a water-based latex paint, you're safe.
DO NOT use oil-based paint, as it contains solvents that could eat through the tube and cause it to leak.

Or slip it inside a larger piece of tubing of the right color.
Hang a planter or other decorative piece at that spot and make the tubing look like it's a part of that.
